New equipment at the ERI “UEPA” with financial support from House of Europe

 

The staff of the Department of Restaurant, Hotel and Tourism Business at the ERI “Ukrainian Engineering and Pedagogical Academy” of V. N. Karazin Kharkiv National University is implementing innovative approaches to education thanks to a grant received by Associate Professor Hanna Zaparenko as part of the House of Europe alumni support programme.

The grant funds were used to purchase a set of professional equipment for implementing sous vide technology, namely: a Hurakan low-temperature cooking appliance, a Lavezzini vacuum packaging machine and corrugated bags, as well as gastronorm containers.

Sous vide technology is part of molecular cuisine and involves cooking food in a vacuum at a low temperature. This allows for higher quality and more delicious products, preserves more nutrients and biologically active substances in food, and provides the human body with nutrients that are deficient in the diet. 

The equipment will be used in the educational process under the educational programme “Innovative Food Technologies” of the speciality G13 Food Technologies, as well as in the research work of students.

The project was implemented on the initiative of Associate Professor Hanna Zaparenko and with the participation of Senior Lecturer Ivan Haliasnyi.
